Most commercial honey that never crystallizes has been heated well above hive temperature — sometimes close to boiling — and then forced through very fine filters under pressure. That combination dissolves the sugar crystals completely and strips out the pollen, fine wax particles, and other natural material that would otherwise give new crystals somewhere to form. What gets lost along the way. Heat is hard on honey.
