“Raw” and “refined” get used loosely on honey labels, but the difference between them comes down to two specific things: how much the honey is heated, and how finely it’s filtered. Both affect what ends up in your jar far more than most shoppers realize.
Straining vs. filtering — not the same thing. Nearly all honey, including ours, is strained after harvest to remove larger debris — bits of wax, bee parts, and other material that come out of the comb during extraction. That’s basic housekeeping, and it doesn’t meaningfully change what’s in the honey. Filtering is a different level entirely: fine filtration, often under heat and pressure, is designed to remove even microscopic material — pollen grains, fine wax particles, tiny air bubbles — to produce a completely clear, uniform product. Removing that much also removes the natural nucleation points that lead to crystallization, along with the pollen that identifies where and from what flowers the honey actually came from.
Heating — the bigger factor. Bees maintain their hive at around 95°F. Honey that’s never processed beyond that range keeps its full complement of natural enzymes, like diastase and invertase, which bees use to convert nectar into honey in the first place. Commercial pasteurization typically heats honey well above that — sometimes close to 160°F or higher — to dissolve crystals completely and extend clarity. That heat comes at a cost: enzyme activity drops off, antioxidant and polyphenol levels decrease, and the volatile aromatic compounds that give a wildflower honey its distinct floral character start to break down. Heated honey often tastes flatter and more generic than the same honey handled gently.
The trade-off, plainly stated. Minimal processing means our honey won’t always look picture-perfect on the shelf. It will cloud, it will crystallize, and it will look a little different jar to jar depending on the season and the flowers our bees were working. That’s the visible cost of doing it the harder way. In exchange, you get honey that’s closer to what actually came out of the hive — full enzyme activity, real pollen, and the flavor differences that come from a genuine, unaltered product.
Where Sandt’s draws the line.
We strain our honey to remove debris. We do not filter it to remove pollen, and we do not heat it beyond what the bees themselves produced it at. It’s a deliberate choice, and one we think is worth explaining rather than hiding behind a label that just says “raw.”
